Do you have your esmtpacceptmailfor files set up properly?  My 
courier/etc/esmtpacceptmailfor.dir/hue-mobile.com file contains all my locals:

scutum
localhost
mailhost
hue-mobile.com
.hue-mobile.com
alg95114y39zi.bc.hsia.telus.net

I have another file courier/etc/esmtpacceptmailfor.dir/hosteddomain.com which contains:

hosteddomain.com

This domain must not appear in locals.
Then I used userdb for accounts in hosteddomain.com with entries like this (ignore the 
line-breaks):

[EMAIL PROTECTED]    uid=104|gid=102|
home=/export/home3/mailhost/hosteddomain.com/William.Hue|
systempw=z.KYICst8YHis|mail=/export/home3/mailhost/hosteddomain.com/William.Hue/Maildir

I found that I had to set "home" in addition to "mail" so that courier could look for 
.courier files, and I had to make sure courier had permission to stat Maildir's parent 
directory, or something like that.
