From within my maildroprc file, I need to pass the email address as a
parameter to my filter. I can access the $HOME variable which contains the
components of the email address (/maildir/domain/user), but I can't figure
out how to get my hands on the address itself. This seems a bit strange to
me. Shouldn't maildrop know who it is delivering the mail to?

All maildrop needs to know is the account's home directory and mailbox location. What E-mail address was used to eventually wind up there is not important.

There will be some environment variables that can be brought in using "import", that might be useful, such as RECIPIENT or LOCAL. See the dot-courier man page.
