See the description of the difference between the 'locals' and 'hosteddomains' file.

A better approach is to define a dummy alias in the aliases file:

[EMAIL PROTECTED]: foo1
[EMAIL PROTECTED]: foo2

and then use

aliasdir/.courier-foo1
aliasdir/.courier-foo2


... which keeps things a little bit more sane.
