I've gone ahead and created a Mailman list, and it told me to create the following aliases:
elc-testlist: |/var/mailman/mail/wrapper post elc-testlist
I'd be very much surprised if mailman's docs provided configuration instructions for Courier.
Why don't you just determine what all of that is supposed to do, then read the relevant Courier man pages. It's insufficient to read just the makealiases man page, since the server configuration determines what addresses are looked up in the alias database in the first place.
