Use a virtual domain alias, and a .courier script that forwards all mail addressed to @fax.com to @fax. If this is an externally-reachable machine, there are some security implications that you need to understand, and resolve (the default configuration blocks faxes from remote sender, you must make equivalent checks in your script).
