The place where you set the interface to bind to, for esmtpd is
etc/courierd (search for ADDRESS).

##NAME: ADDRESS:0
#
#  Address to listen on, can be set to a single IP address.
#
#  ADDRESS=127.0.0.1

Make sure you don't have that uncommented.
