What you want to do is this:

First, log on to your test account.  This could be your current account or
an account created just for testing Courier.  Don't use the root or
courier users.

Next, run these two commands:
   maildirmake $HOME/test
   maildirmake $HOME/bounces

This should create the 'test' and 'bounces' directories (and
associated maildir structures) in your home directory.  You can then
continue with the testing instructions.
