Bowie, I am not sure this is a problem with the Maildir directory. It appears that Courier will not even attempt to deliver the mail for one of my virtual users. The mail is returned with a "User not found" error.

In your case, "/home/<actual user>/<username>/Maildir". You can override this with the MAIL attribute in userdb, but it is not usually a good idea. It can cause other problems later.
