I'm using stock RedHat 7.3, and I've tried this with courier 0.42.0, 0.42.2, 
and 0.42.2.20030630 and cron jobs run as root email the output fine.  In fact 
I've got a bunch of crontab lines which make dial-up connections at certain 
times to send and receive mail and my root account (well the account that 
root is aliased to, of course) gets a nice little email each time with the 
all the pppd stats (as you would expect).  So it's definitely something 
particular to your setup.

Sorry I can't give you any more help.   Have you tried messing with the 
"MAILTO=" line in the crontab and see what happens?
