My first guess would be that NDS is timing out the LDAP connection
and that courier is not correctly handling the dropped connection---
perhaps because stunnel is in the way and it's confusing things somehow.

I'd fire up your packet sniffer of choice (etheral, tcpdump, etc)
and see if you see any obvious symptoms such as a FIN packet
from NDS at around the end of the rest period, or RST packets
in response to the first new packet from stunnel afrer the rest period.
