SSL encrypts the entire process.

You make your own cert or you buy one - if you buy one, you get the benefit
that your mail clients (specifically MS won't complain about an untrusted
root authority...) You CAN get around this, by creating a self signed root
certificate and installing this on EACH CLIENT, but then you have to support
that process - which is way off topic - try running with the self generated
one, read the manual, get it running, and then listen for complaints about
warnings, then when the boxx complains, tell him the cost of a real
certificate, and get him to buy one - for a single domain it is probably
cheaper considering your hourly rate to figure it out.

Does SSL crypt the username and password being sent or would I need to
enable APOP or something of that nature to protect the authentication
