That is controlled by the client, not the server. Unfortunately not all clients support this. Outlook cannot do this, for instance, while Outlook Express can. What clients are your folks using? If you can't figure out how to make your client do this, then let us know which clients you are having trouble with - someone on the list probably knows how to make that client save to the Sent folder if it's possible.
