The short answer is to put "1d" into /etc/courier/queuetime (or /usr/lib/courier/etc/queuetime) to have messages returned as undeliverable after 1 day. Search for "queuetime" in the courier man page. The queuetime file in the courier etc directory controls how long messages stay in the queue. You might also want to look at "warntime" as well which is how long before the user gets a warning message that a message hasn't yet been sent.
