Whenever I connect to my courier-server (which is successfull, displaying
the received messages) and try to read a message, I get an error stating,
that I have to be connected to the imap-server to do this... (this is using
outlook) - any suggestions?
Need more details. What are your settings? You should be connecting to the server on port 143, setting imap as the type should do this. Make sure you don't have any 'offline' settings on. I'm not familiar with Outlook, so I can't help much here.

I have three account whose emails are saved in the users respective linux
accounts. I poll these accounts every 5 minutes. There are about 5-10
clients accessing these mailboxes at the same time (I get the same
error-message as in 1. here too). Now whenever the clients ANSWER an email,
I want them to use the email the orignal message was sent to. How can I bind
the outgoing email addresses to the respective linux-users? I know I have to
configure this, but I do not know where and how. Does any1 know a good,
comprehensive how-to?
YOU can't. It's something the clients have to do. For instance, I have 3 addresses I often use, I have to choose which one to use. Maybe if you were using Exchange or something with Outlook you could, but there's no way to do this with IMAP.
