It's really not that hard, actually.
I use freedt (a completely free daemontools replacement) for many
things, and for a while ran the courier packages under it.  I started
with courier-imap.  I would suggest starting with a service-at-a-time
approach.

First, read and *understand* how /usr/lib/courier/imapd (the shell
script) works.

What I did is I copied that file to a run file, and edited out the parts
I didn't want, starting with the case stuff -- all I care about is the
"start" section.  Then, I removed the stderrlogger stuff entirely, and
made sure stderr was tied to stdout (with exec 2>&1) early in the
script.

If you still have trouble, let me know, I think I might have the script
laying around somewhere.  Then, repeat for each of the other services
you care about (pop3, esmtp, etc...).
