There's no way (that I know of) to set this on a per server basis but you can 
set it globally.  Edit the "modules.esmtp" file in your courier 'etc' 
directory (usually /etc/courier if you built rpms, /usr/lib/courier/etc/ 
otherwise) and set

MAXHOST=1

Now courier will make only one smtp connection per host.
