Add a line to /etc/courier/esmtproutes.
To use a name for the server
:relay.domain.com
or to use an ip address
:[aaa.bbb.ccc.ddd]
'man courier' and scroll down to the esmtproutes section for more
info.
I'm not sure about multiple servers. If the relay domain has multiple
MX records with the same priority (or multiple A records and no MX
records), then I think the mail would be split between the servers.
