Just as a follow-up on this issue:

To get things working between the Motorola IMAP/SMTP client and Courier's implementation of Authenticated SMTP, all I had to do was disable the 'AUTH PLAIN' mechnaism on Inbound ESMTP, leaving 'AUTH LOGIN' enabled. The client and server were then able to successfully make it through the authentication steps, allowing me to send email from my phone no matter what network I was on.

I do have to use either AUTH PLAIN or AUTH LOGIN on my configuration because I am using the PAM authentication back-end, which requires un-encrypted passwords (unlike CRAM-MD5).

Needless to say, it is very cool to be able to send/receive email from my phone with full authentication and SSL/TLS support. SHAMELESS PLUG: Go get yourself a Motorola v400 or v600 phone, and try it yourself.
