What effect will it have? Is there a better way? I don't want to alias the
messages to the bit bucket - there are a bunch of reasons this will cause me

Some systems today use callback verification -- before accepting the message they establish an outbound connection to the apparent sender's address, and if the RCPT TO: is rejected they refuse the message.

Therefore, your From: headers and the return address should be left alone. Provide a Reply-To: header to an address that bounces with a "this address does not accept mail, use X" message.
