If your courier does not listen on 127.0.0.1:25 or *:25, yes. Otherwise you'll have to fiddle it a bit, but it's not hard. You can also setup a dummy interface and bind stunnel to that, but you still have a problem if courier listens on *:25. Just make courier listen only on the interfaces where it should listen.
