When $RECIPIENT is [EMAIL PROTECTED]:
HOST=domain LOCAL=user-foo-bar-baz EXT=foo-bar-baz EXT2=bar-baz EXT3=baz
That's exactly what the man page states, and I don't see any other way of making it more clear.
