>From the testmxlookup manpage: The error message "Soft error" indicates a temporary error condition (usually a network failure of some sorts, or the local DNS server is down). I know that courier's dns lookup is a bit different that what you get when you run "dig", but I don't remember the details. Maybe someone else can point you in the right direction. All I can suggest is to make sure your /etc/resolv.conf is set up properly.
