The smtp/esmpt parts of courier-0.47 and the smtp/esmtp parts of postfix
are almost certainly going to conflict with one another.

Well, they don't *seem* to. I even tried stopping Postfix and restarting Courier....port 25 was left untouched.

It probably works because I broke it in some way that I can't see. ;-)

You didn't break anything. Courier won't listen on port 25 until you explicitly start the SMTP server part of it.
