We are running the exact same scenario. Courier forwards the mail to the exchange address via a maildrop script. The exchange domain is routed via an entry in esmtproutes on the Courier server. Since there are no DNS records for the domain, it is impossible to deliver directly to this address from anywhere else. In Exchange, you will need to add an extra email address to each account. I'm not sure how to tell exchange to accept mail for a domain. All of that was set up before I got here. I would suggest that you configure the Courier server and add an email address or two to the Exchange box for testing. You can send your test messages directly to the Courier server for testing while real email is still flowing directly to the Exchange server. Once you are ready to do the switchover, just make sure you have added all of the @exchange.domain.com addresses in Exchange before you switch the MX record.
