take the UID/GID into account. Moving maildirs is quite straightforward. I like 
using rsync for this.

Of course. Remove the domains from the hosteddomains file (or directory), makehosteddomains, add the domains in acceptmailfor, makeacceptmailfor, then setup an esmtproutes file pointing to the new mail server.
