I can guarantee you that there's absolutely no code in Courier that would randomly set the sender's domain to "tamay-dogan.net".

You can search the source code, if you'd like.

That domain must come from someplace else. Either mutt sets it, or you told Courier to set this as the sender's domain, using the environment variables documented in the sendmail man page.

Since you've posted a portion of Courier's sendmail man page elsewhere, I assume that you've read this manual page, especially the "Sender's address" part.
