You should also log, at the bare minimum, each IMAP connection.

How do I setup courier to log each IMAP connection? I couldn't find any setting in the etc files.

Append IMAPDEBUGFILE=debug.log to the imapd configuration file.

Note that this creates debug.log in every account's Maildir.
