courieresmtpd does not normally log the raw SMTP conversation to syslog.You must either be using a custom-hacked version of Courier, or it wasn't properly installed.
If I poke around /usr/local/courier/0.52.1 I find that the message is sitting under /usr/local/courier/0.52.1/var/tmp:--------------------
System is Red Hat Enterprise Linux 4 WS on an AMD64.
In that case you should be building and installing RPMs, as INSTALL tells you to do.
