You can either pass the options to the rpmbuild script or you can edit
the spec file.  If you look near the top of the file there's a LONG line
that begins

%define configure CFLAGS=

That's specifying all the flags that will be passed to the configure
script.  If you want to pass more options to it then just add them to
the end of that line.

I'm sorry you're having trouble.  I've been using courier since version
.1X and building rpms has always been the easiest way to get it built
and installed for rpm based distros.  I've used it on redhat, fedora,
and suse - it always works great.  It may take a little work to figure
out how the rpm process works, but it's worth the time.  And everything
you learn on building rpms for courier is useful for EVERY rpm out
there. Stick with it - I think you'll be glad you did.
