More or less, yes.

Your original setup only worked because Sendmail was *not* configured to treat "postini.ourdomain.com" as a local domain, so it delivered mail to the MX. Courier *was* configured to treat that domain as a local, so it did not. If Courier and Sendmail had been configured identically (that is, if both were configured to treat "postini.ourdomain.com" as a local domain), then neither would have delivered messages to your Postini host.
