I've been gripping about this same problem myself, and while the
suggestion of adding it to the MYSQL_SELECT_CLAUSE is interesting,
leaves the issue of whether there would be sql injection errors, or that
it would update regardless of whether they user actually succeeded at
the authentication, as mentioned.
So searching around the web, I found a site with a patch for courier 3.x
that would allow courier to log to mysql.
Reading the page closely I noticed that someone has re-written the patch
to support courier-authlib 0.56.

But in case that disappears, and for the sake of prosperity in the list,
I've attached the patch.
I haven't used it yet. Its on the list for one of my coders to go over
to verify integrity, and compatibility with newer versions, etc. I
don't vouch for it, but I do request that it would be nice if this
somehow saw its way into the primary devel tree. Current
POP-before-SMTP solutions are scary. Seriously, tailing log files? I
run a medium sized ISP, and my logs are monsterous. I couldn't imagine
how bad this would be on large systems.
