Nope.  This is right.  See “Virtual Domains” in the makealiases(8) man page.

The right way to be rewritten should be
"[EMAIL PROTECTED]".

When I put the file .courier-fax-default into my directory
/usr/lib/courier/etc/aliasdir
With the content || echo "$EXT"@fax

Nothing happens except the mails to my faxaddress ([EMAIL PROTECTED]) rest
in my mailque forever.

Of course something happens. And to find out exactly what happened, you look at the maillog/syslog file.
