I think you can put the IP address of his server in
/etc/courier/smtpaccess/default like so:

1.2.3.4 allow,BOFHCHECKDNS=0

I saw that setting, but it wasn't clear if that was the check I needed
to disable.  I was also hoping to be able to do this for the domain
rather than the MX.

No, it's not possible to do so.

This setting can only be adjusted on a connecting IP address basis.
