Not sure if I understand you or not but if you're not using Sqwebmail then it's not courier that's doing this, it's your mail client. Courier IMAP has no built in functionality that renames Sent folders by date. If you're using Sqwebmail, follow the advice of the first respondant, otherwise, look into the documentation of your mail client on how to turn of sent folder renaming.
