After a bit more digging and thinking, I now have:
/usr/lib/courier/etc/locallowercase
and
/usr/lib/courier/etc/bofh with the following line inside:
opt BOFHBADMIME=accept

but I still get the errors below, even after restarting the server:

Sep 18 16:00:00 mail courieresmtpd:
error,relay=::ffff:131.238.75.40,from=<[EMAIL PROTECTED]>,to=<[EMAIL
PROTECTED]>:
556 Address unavailable.

Sep 18 16:00:00 mail courieresmtpd:
error,relay=::ffff:131.238.75.40,msg="502 ESMTP command error",cmd: DATA

Thanks for any help you can provide,

This is an artifact of your earlier messages bouncing. This is a lagged result of Courier's backscatter suppression, which is documented elsewhere. These remaining errors will go away after about two hours.
