Yep, that's what dot-courier files are for. You probably want to ditch the whole dot-courier setup that you've got. It really seems overly complicated. Whatever you're specifying in dot-courier files (mailbox path?) probably belongs in your userdb. Just specify users' home directories in the userdb, and use maildrop in DEFAULTDELIVERY.
