I've got courier setup to use TLS, and I've run the various tests to see that it's claiming to use it, but I'd like to know if there is something I can do or check to make sure that e-mail is being sent and received securely. Can I assume that any log line with "pop3d-ssl: LOGIN" means that e-mail downloading is secure?

It means that mail was downloaded using POP3 over SSL.

                        What about for SMTP?

Send a test message and check its headers.
