Courier does not support granting of relaying privileges based on the contents of the From: header. And I do not know if any mail server that does this.
Absolute relaying privileges can be given to any range of IP addresses. Also, relaying privileges are given after any successful SMTP authentication.
You probably want to use authenticated SMTP. Nothing needs to be configured. Courier will give relaying privileges to anyone who provides a valid userid and password.
