Deactivating TLS by setting COURIERTLS= solved the problem. As I can remember there were some changes in TLS ... or I am missing something? Nothing real urgent, I'm fine how it is configured now. Just wondering what changed between 0.53.x and 0.57.0 causing this thing - or what I'm missing here :-)
