Courier-IMAP does not log individual commands. Even if it did, there's no way to identify the connecting E-mail client. As far as a server is concerned, it's nothing but a network connection. The network connection may be originated by an E-mail client, a script of some sorts, or a human manually typing in the commands via telnet.
