I maintain the Courier packages for pkgsrc.  You can take a look at the 
following packages from pkgsrc to see how I did this:

        pkgsrc/mail/courier-imap
        pkgsrc/mail/courier-maildir
        pkgsrc/mail/courier-mta
        pkgsrc/mail/sqwebmail
        pkgsrc/mail/maildrop
        pkgsrc/meta-pkgs/courier
        pkgsrc/net/couriertcpd
