As far as I know, Courier-IMAP doesn't know anything special about the word
"INBOX" -- the entity that most individuals would think of as an inbox is
simply the base of the Maildir structure.  So this is being caused by either
Postfix, the client or the user.  (FreeBSD is similarly ignorant of any
special meaning to a directory called "INBOX").
