You'll have to create those files yourself. 'me' contains the fullz 
qualified domain name of your system and esmtpacceptmailfor will contain 
the names of the domains you want to accept mail for.

Since you asked that question I think you should reread the 
documentation to make sure you will get a working system. To understand 
what me, smtpacceptmailfor and hosteddomains are doing is essential to 
running courier-mta. It is quite a logical setup and I'm sure you'll 
figure it out upon rereading.
