Just create the files that you need in the "/etc/courier" directory. Make sure the user courier is running as can read them. The RPMS don't populate every configuration file. You create the ones you need as you need them. Otherwise courier uses its built-in defaults. So if the 'locals' file doesn't exist, it uses the 'me' file. If the 'me' file doesn't exist, it runs "gethostname()' and uses the results. The courier man page and documentation will usually explain what courier defaults to if you don't explicitly configure values.
