What versions of Courier are you running? Make sure you're running the latest version. This is due to SSL/TLS protocol mismatch (the TLS_PROTOCOL setting). The default settings in the current version of Courier are more liberal, by default.

I'm running the latest one provided by my OS, 0.58.0.2008012. Is the
trouble only a matter of configuration? if so, what settings are the
problem?

The TLS_PROTOCOL setting. You'll need to try each possible value, documented in the comments, until you find a combination that works.

Better yet, upgrade to the current version and use the default settings.
