There's nothing to document. DEFAULT is where maildrop delivers the message by default, in absence of an explicit mail delivery instructions. See the maildropfilter man page.
If the account's record correctly sets the maildir's location, that's where maildrop will deliver the message, automatically, without any explicit mail delivery instruction.
