...And if I try and stop it with: # courieresmtpd stop
courieresmtpd: don't know your IP address, no dice.

That's because the running process, courieresmtp, has nothing to do with courieresmtpd.

Furthermore, there is no "courieresmtpd stop" command anyway. There's an "esmtpd stop" command, which stop the ESMTP server, courieresmtpd, which has nothing to do with courieresmtp, the ESMTP client.
