a) I've set up Courier in order to accept emails from "num...@fax"
addresses. Courier uses "courierfax" module, that calls in turn

perform different actions according to the user that has been
authenticated via SMTP. I've inspected the parameters, uid/gid and the
enviroment variables related to sendfax script, but I wasn't able to
find any data related to such user. How can I obtain this information?

This information is no longer available by the time mail gets to this stage.

b) Is it possible to have a similar behavior for a different virtual
domain like fax, i.e. @sms? I'd like to set up a "courierfax"
chain-like, but with a "couriersms" module that can call a custom
"sendsms" script. Of course question (a) is mandatory for this point,
cause it's a constraint also for this service.

You can redirect all mail for a domain to a single account, then install a mail delivery script there that does whatever you want it to do.
