According to the Amazon EC2 FAQ, Amazon offers a choice of stock Linux distros. They don't have a custom Linux distribution. If there are no Courier packages in Gentoo, then Amazon won't have them.

Amazon does offer Debian as one of its choices, and Debian does have a Courier port. So that's one option.

Another option is to switch to Fedora, and build Courier packages from the tarball. It's fairly easy to build RPMs from my tarballs.
