If you are talking about the client software: As far as I understand, it
might be possible (though not very reliable) for SMTP, by logging the
"User-Agent: " header (and maybe some others to detect bad software like
MS Outlook).
For the IMAP-side, you are out of luck; I don't know of any way that
IMAP-clients would specify the user-agent when connecting to an IMAP-server.

(but I might be wrong :)
